#290: Intense Chocolate Torte

This is not a recipe blog.
This is a blog about what locals do on Nantucket.
Here's something this local does:
make torte during the Christmas season.
Here's the recipe:

crust, mix together: 
1 c toasted, chopped pecans
(watch while toasting, these are too expensive to burn)
1 c graham cracker crumbs
(one packet finely rolled)
2 t unrefined sugar
1/2 stick unsalted butter
Press into 9" springform pan

Melt 16 oz (1 1/2 packages)
Ghirardelli 60% Cacao chips
Add 1 c whipping cream, gently

Beat 6 large eggs
Add 3/4 c unrefined sugar
and 1/3 c unbleached flour
Beat until thick and lemon colored--
could take up to ten minutes
fold 1/4 egg mix into chocolate mix,
then mix all together, gently.

Pour into crust. Bake at 325 degrees
for 45 minutes 
(until edges puff halfway to center)
Cool 4 hours, haha,
before serving.

No torte I ever made was still in existence
four hours later.
The portion on the right was for friends.
The portion on the left wasn't even cool yet.

The Whalers won the Super Bowl!
