#348: Halibut Recipe

Yesterday's catch is today's supper.
There are advantages to being a fishwife.
This is David's super-easy recipe.
I took pictures, he cooked.
Preheat the oven to 375 degrees.
You'll need:
2 lb. halibut, an inch and a half thick
3 T mayonnaise (Hellman's Light, the only kind I know)
1 T lemon juice
2 T dry white wine
sea salt, fresh ground pepper
1/4 C fresh grated parmesan cheese

Season fish with salt and pepper,
place in Pyrex pie plate
Splash on lemon juice and wine
Spread mayo on top,
Sprinkle with parmesan cheese.

Set aside for an hour if you want,
to let the flavors blend

Bake in middle of oven 15 min,
move to top and broil 5 min
until surface of fish is lightly browned and bubbly.
You know it's done when layers separate with a fork.

Set out with your salad from the greenhouse and:
Dinner is served.
As David did the cooking, I'll do the dishes.
It's only fair.
