#405: Garlic Scape Pesto

Garlic scapes  are God's doodles.
Who am I to neglect such a wonder?

There is a theory that removing the scapes 
will make larger heads at harvest.
I did so on half our garlic and will have
a comparison for you in a couple of weeks.

Meanwhile...
take off the flowering head and chop the scape stem
into 1/2" pieces.
Add an equal amount of olive oil and parmesan cheese.
You can add pine nuts too.
I don't as I freeze leftovers to add to winter soups.

Chop. Smell. Mmmm.

 Leave it kinda chunky.



 Add to whole-grain pasta or new potatoes.
Top with roasted walnuts and more parmesan.
Add some pan-fried zucchini and dinner's on the table.
